For the cooks among you

I've started being more creative with Palestinian spices/traditional foods and giving them a modern era twist - with some great success.  If you like cooking, read on:


  • Cooking freekah (cracked smoked green wheat, available to order online here or I'm sure whole foods has it in their grains section) in chicken broth with cardamom and ginger for a delicious and healthy chicken soup with a twist
  • Steaming spinach and then topping it with red onions sauteed in olive oil and sumac, a delicious lemony, deep purple spice (available online on Amazon, search "sumac spice")
  • Putting a slab of lamb fat in the bottom of a pot and cooking rolled grape leaves over that.  Woah, delicious.
  • Rather than eating chickpeas from the can uncooked, cooking them a little in olive oil.  Soft warm, salted chickpeas spread on toast = heaven.  Its like healthy butter!
  • Two words: hard-boiled eggs plus tahini.  Amazing.

These are just some things that I've gotten into here.  Hard boiled eggs in everything.  Sumac in everything (try it on grilled fish, oh my!).  Lamb fat in everything (you haven't lived until you've grilled straight lamb fat and eaten it off the skewer).
